Baking is a science, and Beranbaum has mastered it, and explains it clearly and concisely. This is the most complete guide to techniques and the properties of ingredients you can buy, beautifully organized and handsomely bound. Buy this book.

Guaranteed perfection.
I've used my copy of this book so much, that it falls open at all the best recipes! Whenever I make a cake from this book, I'm asked for the recipe, and nothing has ever disappointed. I have also bought copies for friends and relatives, and they fell in love with it too. This is a complete classic. Truly a deeply loved friend.
