I own hundreds of cookbooks spanning many cultures and ages. I bought this book as a curiosity but was absolutely floored by the depth and span of this book. The introduction by Roger Owen is absolutely spellbinding. It covers rice as I've never seen another subject covered--especially in a cookbook. The introduction is 93 pages long and I'll guarantee you that you won't want to put it down. It is fantastically written and covers that seemingly simple kernel literally down to the molecular level. It also covers how rice has affected the political structure in varied countries . Religion, culture, horticulture, fetish and history are viewed as they are influenced by rice. Oh, yes, the recipes are very good. I have cooked maybe 10 or 20 dishes-all good so far. This is a must-have. I have since bought copies for friends and my teenage godson who is a budding chef.
